Chef Paula Deen hid diabetes, pushed high-fat food (AP)

NEW YORK ? Paula Deen, the Southern belle of butter and heavy cream, is making no apologies for waiting three years to disclose she has diabetes while continuing to dish up deep-fried cheesecake and other high-calorie, high-fat recipes on TV.

She said she isn't changing the comfort cooking that made her a star, though it isn't clear how much of it she'll continue to eat while she promotes health-conscious recipes along with a diabetes drug she's endorsing for a Danish company.

"I've always said, `Practice moderation, y'all.' I'll probably say that a little louder now," Deen said Tuesday after revealing her diagnosis on NBC's "Today" show. "You can have diabetes and have a piece of cake. You cannot have diabetes and eat a whole cake."

Health activists and one fellow chef called her a hypocrite for promoting an unhealthy diet along with a drug to treat its likely effects. Deen added her support of the Novo Nordisk company to a collection of lucrative endorsements that include Smithfield ham and Philadelphia Cream Cheese.

Deen, who will turn 65 on Thursday, said she kept her diagnosis private as she and her family figured out what to do, presumably about her health and a career built solidly on Southern cooking. Among her recipes: deep-fried cheesecake covered in chocolate and powdered sugar, and a quiche that calls for a pound of bacon.

"I really sat on this information for a few years because I said, `Oh, my gosh, what am I going to do about this? Is my life fixing to change? Am I no longer going to like my life?" she asked. "I had to have time to adjust and soak it all in and get up all the information that I could."

While Deen, who lives in Savannah, Ga., has cut out the sweet tea she routinely drank straight through to bedtime and taken up treadmill walking, she plans few changes on the air.

Government doctors say that being overweight (as Deen is), over 45 (as Deen is) and inactive (as Deen was) increase the risk for developing Type 2 diabetes. Growth of the disease in the U.S. has been closely tied to escalating obesity rates. Roughly 23 million Americans are believed to have the most common Type 2 diabetes; patients' bodies either do not produce enough insulin or do not use it efficiently, allowing excess sugar, or glucose, to accumulate in the blood.

Deen is the pitch person for Novo Nordisk's new online program, Diabetes in a New Light, which offers tips on food preparation, stress management and working with doctors on treatment. She has contributed diabetes-friendly recipes to the website and takes the company's drug Victoza, a once-daily noninsulin injection that had global sales of $734 million in the first nine months of 2011.

A recipe for Lady and Sons Lasagna, on her diabetes-conscious site, uses extra-lean ground beef and cans of unsalted tomato sauce and diced tomatoes, for a dish estimated at 260 calories a serving. Turn to Deen's collection of recipes on The Food Network's site and find Grandmother Paul's fried chicken, with Crisco shortening for frying, or baked French Toast casserole, with two cups of half-and-half and a half-pound of butter. No calorie counts are estimated.

The Novo Nordisk site links to promotional materials for the drug Victoza. Company spokeswoman Ambre Morley and Deen declined to disclose how much she is being paid.

Deen said she had no help or advice to offer the public when she was first diagnosed, but feels she's making a contribution now.

None of that matters much to outspoken chef Anthony Bourdain, who has never been a Deen fan. He told Eater.com of her diabetes announcement: "When your signature dish is hamburger in between a doughnut, and you've been cheerfully selling this stuff knowing all along that you've got Type 2 diabetes ... it's in bad taste if nothing else."

In Yuba, Wis., Judd Dvorak watches Deen cook on TV all the time with his wife. He thinks Bourdain has the right idea. Dvorak said it's wrong for Deen to accept money to become a paid spokeswoman for a diabetes drug after espousing a cooking style that helps lead to diabetes.

"It would be like someone who goes on TV and brags about how wonderful it is to smoke two packs of cigarettes a day and then when he or she gets lung cancer becomes a paid spokesperson for nicotine patches," Dvorak said. "I feel it is in very poor taste and if she chose to become an unpaid spokesperson for the American Diabetes Association, that would be a better way for her to make a difference and help fight this horrible disease."

Deen also smokes, but she considers her heavy-handed food only one piece of the diabetes puzzle, with genetics, lifestyle, stress, age and race. She said she would never advocate smoking and her diabetes is "well under control."

While making changes in her personal life, she doesn't think her TV shows ? there are three ? will look much different. She spends about 30 days a year taping, "so I'm not cooking and eating that way every day."

That's something the public doesn't necessarily know. The food, Deen said, isn't really to blame.

"I am who I am," she said. "I think the South gets a bad rap sometimes, saying our food is very unhealthy, but frankly I don't think that's the case. I think it's like any other food, whether it be Italian, French, Cajun. They all can be very high in calories and that's where we have to practice portion control and moderation."

Morley said the company didn't know Deen had diabetes when it approached her about promoting the new health initiative.

"We really just wanted to ask her, `Hey, Paula, do you think we could challenge you to change up some of your recipes and make them diabetes-friendly," Morley said. "And her reply was, `How did you guys know I had diabetes?'"

It was a surprise to the Food Network as well. Network officials found out only last week, said spokesman Jesse Derris.

"As part of the Food Network's family, our only concern is for Paula's health. We will continue to support her as she confronts this new challenge, taking her lead on what future episodes will offer her fans," he said.

Some health experts question the delay between the time Deen was diagnosed with diabetes and her move three years later to promote a healthier way of cooking and living.

"A more responsible approach would have been that once she was diagnosed with diabetes to really emphasize to her viewers the importance of eating a healthy diet," said Michael Jacobson, executive director of the Center for Science in the Public Interest.

Thank you a ton. I should have my character up after classes tomorrow. I should be home from classes about 15-16 hours from the time I am posting this. Right now it is about 11:40PM at this moment for posting this and I need to get some sleep. Although I will have a character profile up no more than 2 hours after I get home and a picture will soon follow as I am planing on doing some editing before posting it up. (I hate using a picture that I did not change at least 80% of it for personal reasons.)

I think I may have made the mistake of sending in the same character profile twice with different names. It told me that someone had already taken my characters name which I didn't believe to begin with then when I went through the second time, with a different name, it added that one and took me back to my characters where I spotted the character I'd turned in the first time and the second one. You can decide which one you want, Reality and I'll just play him. Reject the other, I guess.

(AP) ? The suspicions have lingered for decades.

Pablo Neruda, Chile's Nobel Prize-winning poet, would have been a powerful voice in exile against the dictatorship of Gen. Augusto Pinochet. But that all changed just 24 hours before Neruda was to flee the country in the chaos following the 1973 military coup.

He was 69 years old and suffering from prostate cancer when he died, exactly 12 days after the brutal coup that ended the life of his close friend, socialist President Salvador Allende.

The official version was that he died of natural causes brought on by the trauma of witnessing the coup and the lethal persecution of many of his friends. But doubts remained, even after Pinochet relinquished power in 1990 and Chile became one of Latin America's most stable democracies.

Chilean Communist Party lawyer Eduardo Contreras said he believes the poet was murdered, and he is supported by Manuel Araya, who was Neruda's driver, bodyguard and assistant in the year leading up to his death.

While Neruda's widow and his own foundation have rejected the theory, its resurgence nearly 40 years later reflects the suspicions haunting this nation of 17 million that the full story behind the coup and the dictatorship remains untold.

Araya has long contended that a doctor ? not Neruda's regular one ? gave him a fatal injection at the Santa Maria clinic or ordered somebody to do so. Talking to The Associated Press, Araya described the day of Neruda's death at the clinic, where the poet was being treated for his cancer, phlebitis and a hip problem. Araya had accompanied him as his bodyguard to protect him ahead of his departure from Chile. He himself wasn't there,and says the story was told to him by a nurse whose name he has forgotten.

"Coincidentally," Araya said in sarcastic manner, Dr. Sergio Draper "was passing by in the hallway when a nurse called to him and said that Neruda was in a lot of pain, and this doctor, very considerately, goes and gives him a Dipirona (analgesic), and the Dipirona... killed him."

Adding to the conspiracy theories, it was at the same Santa Maria clinic where another prominent Pinochet critic, former President Eduardo Frei, was allegedly poisoned while recovering from hernia surgery in 1982. A judge in Chile has accused four doctors and two of the dictator's agents in Frei's death. The case is ongoing, and Frei's body has been exhumed. One of the doctors questioned in the case, though not accused: Sergio Draper.

The AP was unable to reach the doctor for comment, after contacting the clinic where Neruda was treated and one of Chile's main medical schools.

However, in an interview published in the Argentine newspaper Clarin in September, Draper strongly denied the allegation. he said he was only following the instructions of Neruda's physician, Vargas Salazar, to help relieve the patient's pain by giving him what he remembers was the drug Dipirona.

"I ordered that he be given an injection prescribed by his physician," Draper said. "I was nothing more than a messenger. It's outrageous that we are constantly under suspicion."

Neruda and Allende symbolized a turbulent, confrontational era in Chilean history, and their deaths following the Sept. 11, 1973 coup have long been shrouded by suspicion. Authorities recently exhumed Allende's body and confirmed that the former president committed suicide rather than be captured as troops moved in on the presidential palace.

Pinochet's dictatorship lasted from 1973 to 1990, and left 3,095 opponents of the military regime dead or missing, according to recent government statistics. There were 37,000 political prisoners. Neruda's fame as a poet and dissident was posthumously heightened by "Il Postino," or "The Postman," a semi-fictional 1994 film about his exile that won several Oscar nominations. He is buried on the Isla Negra estate where he lived.

In December, Chile's Communist Party asked that Neruda's body also be exhumed for testing. The judge investigating his death has not ruled, but veteran forensic expert Dr. Luis Ravanal said it could be difficult to find traces of toxic substances that would confirm poisoning.

"It is one thing is to detect a substance, another to demonstrate that it is there in sufficient quantities to kill him," he told the AP. "It is difficult to determine if it is a lethal or therapeutic dosage."

But Contreras says an exhumation is needed. He said medical records and Araya's account proved to him that Neruda's cancer was under control at the time of his death.

"One thing is clear: Neruda didn't die of cancer," Contreras said.

Contreras said the death certificate issued at the clinic listed the cause of death as cachexia, or extreme malnutrition and weight loss that left him unable to carry out minimal activities. But at the moment of his death, Neruda weighed more than 220 pounds (100 kilograms), according to Araya and Mexico's ambassador to Chile at the time of the coup, Gonzalo Martinez Corbala.

Martinez told the AP from Mexico City that he found no change in Neruda between visits to him before and after the coup.

Martinez said that before hearing the driver's statements he had suspected nothing unnatural about Neruda's death. "Now I have doubts," he said.

The Pablo Neruda Foundation, which manages his estate, author rights and house/museum, rejects the claims of his driver.

"It doesn't seem reasonable to build a new version of the death of the poet based only on the opinions of his driver," the foundation said in a statement, contending that Araya does not present any credible evidence to support his claims.

"The Sept. 11, 1973 coup, the death of his friend, President Salvador Allende, and the persecution launched against others of his friends, caused his health to deteriorate to the point that ... he had to be transferred in an emergency from his Isla Negra home to the Santa Maria Clinic on September 19," where he died of natural causes, said the foundation in a statement.

Araya says he went at least eight times to Communist Party directors to tell his story, but they paid no attention.

Contreras explained. "We were in a dictatorship; we weren't at the time interested in information different from that given by Matilde," he said, referring to Neruda's widow, Matilde Urrutia, who supported the foundation's conclusion until her death.

Araya, refuses to speak to Chilean media, finally took his story to the respected Mexican investigative magazine Proceso, and the May 2011 article went viral.

That persuaded the party to pay attention.

"Everything indicates that it was a heart attack (that caused his death)," Contreras said. "What caused the attack? The injection... If you read the literature on Dipirona you are going to find that it is lethal when given in excess."

The Chilean newspaper El Mercurio, which backed the dictatorship at the time, reported in its Sept. 24, 1973, edition that Neruda had died in a way similar to what Araya described. It said that the poet died "of a heart attack ... a consequence of a shock. After receiving an injection of a sedative, his condition deteriorated" and he entered a pre-coma state and died.

Draper was one of several doctors called to testify in the possible killing of former President Frei. Frei was recovering from a hernia operation in the Santa Maria clinic when his health suddenly deteriorated and he died in January 1982. Six people have been accused of poisoning him, according to the judicial file.

Neruda's case since May has been in the hands of Judge Mario Carroza, who also investigated the death of Allende. Advised by a team of international forensic experts, he concluded that Allende had committed suicide.

He is also trying to determine how 725 opponents of the dictatorship died.

Stocks hit by S&P downgrade speculation (AP)

PARIS ? Mounting speculation that a leading credit agency is to imminently downgrade the ratings of a number of eurozone countries drove global markets sharply lower Friday and sent the euro currency spinning down to a 17-month low.

The euro nose-dived on speculation that Standard & Poor's was finally going to deliver the downgrades it had threatened for much of the 17-nation eurozone just over a month ago over concerns of Europe's ability to get a grip on a debt crisis that's raged for around two years.

In the run-up to the last meeting of EU leaders on Dec. 9, S&P said it was putting 15 of the eurozone's nations on notice for a downgrade and there has been particular concern that France's rating would be cut.

A downgrade of the eurozone's triple A nations, such as France, could have far-reaching implications, potentially complicating the ability of Europe's bailout fund, the European Financial Stability Facility, or EFSF, to provide support to struggling countries. France is a major contributor to the EFSF.

Rumors of the downgrades provide further evidence that investors in the markets remain jittery despite some positive signs over Europe's debt crisis this week. Auctions from the likes of Italy and Spain have gone smoothly while the European Central Bank's chief noted signs of economic stabilization.

"This rally is not built on solid foundations so this (selling) is indicative that underlying there's not much confidence," said Louise Cooper, markets analyst at BGC Partners.

Standard & Poor's did not comment on the speculation.

Nevertheless, the market response to the speculation was fairly savage across all markets.

In Europe, Germany's DAX closed down 0.6 percent at 6,143.08 while the CAC-40 in France fell 0.1 percent to 3,196.49. The FTSE 100 index of leading British shares ended 0.5 percent lower at 5,636.64.

Meanwhile, the euro was 1.1 percent lower at $1.2672, having earlier fallen to a low of $1.2623, its lowest level since August 2010.

In the U.S., the Dow Jones industrial average was 0.7 percent lower at 12,381 while the broader Standard & Poor's 500 index fell 0.7 percent to 1,286.

Adding to unease was a dive in profit at J.P. Morgan Chase & Co of 23 percent in the last quarter of 2011.

Though the pickup in the stream of U.S. earnings will impact markets over the coming days and weeks, Europe's debt crisis is likely to remain the main focus.

Europe's crisis sprang from worries that countries had taken on more debt during boom years than they could pay back once their economies slowed.

Those concerns led investors to demand astronomically high yields or interest rates to lend money to countries like Greece, Ireland and Portugal, eventually forcing those three to seek bailout loans, rather than rely on market financing.

In recent months, it has seemed as if Italy would join that ignominious club, but that would present an insurmountable challenge: Italy's economy dwarfs the three that have sought rescues and Europe can't afford to bail it out.

Earlier, Asian shares were mostly higher, responding to Thursday's strong debt auctions in Spain and Italy. Japan's Nikkei 225 index rose 1.4 percent to close at 8,500.02 and South Korea's Kospi index moved 0.6 percent at 1,875.68. Hong Kong's Hang Seng index vacillated before closing in positive territory, up 0.6 percent to 19,204.42.

But mainland Chinese shares fell as investors continued to cash in on recent gains. The benchmark Shanghai Composite Index lost 1.3 percent to 2,244.58, while the Shenzhen Composite Index dropped 3.5 percent to 845.93.

Even oil prices, which have been rising on fears of a strike in Nigeria and an embargo of Iranian oil, fell Friday afternoon. When investors worry about the economy, energy prices typically fall since slow growth hurts demand.

Benchmark oil for February delivery was down 30 cents to $98.80 per barrel in electronic trading on the New York Mercantile Exchange.

Pets: What&#39;s In That Dog Food? | CaryCitizen

Cary, NC ? Murphy is my grandfather?s Black Labrador Retriever.? He is about ten months old, and he is adorable. But what?s in his food bowl?

A Dog?s Life

Murphy has a good life.? He goes the dog park every day.? He spends a few hours either jumping off the dock into the lake (remember, he?s a Lab) or running around and just being a dog.? When it?s time to head home, he?s ready for dinner, and then sleep.? His life is full of people who love him.

Murphy is a lucky dog.? My grandfather really thinks about what goes into Murphy?s food bowl, which is more than can be said for most dog owners.? I?m not throwing anybody under the bus ? I?m just stating a fact.? They may think they know what they?re feeding their dogs.? But most of them have been brainwashed by advertisements telling them that their brand of dog food is amazing.

If you have a dog, think back to the last time you bought dog food.? Did you even bother to look at the ingredients list?? If you didn?t, go to your brand?s website and check right now.? I?ll wait for you.

? Have you checked yet?? No?? Go do it.

Ingredients

Alrighty, then.? Did your dog?s food have chicken as the first ingredient?? Or maybe lamb?? Or fish?? If so, good for you ? and, more importantly, good for your dog!? If not, it was probably a corn or soy product.? I?m sorry to say that that is bad news.? Corn and soy are both inflammatory in dogs.

Now look at the second ingredient.? Depending on your brand, this could be anything from ?ground rice? to ?chicken meal? to ?meat?by-product meal.?? So you know, a lot of the meat in dog food is in ?meal? form. All this means is that the meat has been concentrated and dehydrated, so that there is less fat and more protein packed in the food.? It?s obviously a process, but it?s one of those things you just can?t avoid, and it?s certainly not the worst thing you could feed your dog.

One thing to think about ? the type of meat should always be listed, be it chicken, duck, fish, beef, whatever.? If it just says ?meat,? then that means the manufacturers don?t want to disclose what kind of animal is in their dog food.? It?s like the mystery meat in the cafeteria ? nobody wants to eat that.? If your second ingredient is another corn or soy product, you?ll probably want to research another brand.

What?s the third ingredient?? If you haven?t found an animal protein source yet, you should definitely see one now.? If the first two ingredients were animal-sourced, then this third ingredient will probably be a grain ? rice or? barley.

The fourth ingredient will be another grain, and the fifth will probably be some form of animal fat.? Like before, you?ll want to know what kind of animal.? It might say ?preserved with mixed tocopherols? ? that?s okay.? Mixed tocopherols are antioxidants that keep the fat from spoiling.

Now, if your dog food was mainly quality meat and whole grains, then you ? and, more importantly, your dog ? are good to go.? However, if you found a bunch of corn, soy, and mystery meat, you might want to look at some other brands.? Blue Buffalo, which is what Murphy eats, is an affordable brand with minimal fillers and no artificial stuff.? My grandfather swears by it, and I can certainly vouch for it.? It may not be the ?perfect? dog food, but it is definitely good.? (I promise that I am not being paid to advertise Blue Buffalo.? I am just a fan of their dog food.)

Really, this whole post was just to get you in the habit of reading ingredients.? Maybe you already read the ingredients on your food, or your family?s.? If you do, that?s great ? keep up the good work!? But if you have a dog, it?s part of your family, too.? You should definitely treat it that way.? It is more expensive, but by investing in quality food, you might be saving yourself a lot of money on vet bills.

Gus Counts Too

Up next on the pet food frontier: cat food!? We do not actually have a dog, although that will hopefully change some time this year, but we do have a cat named Gus.

Gus is a great cat.? He?s sweet, he never bites or scratches, and he even puts up with my baby brother ? no easy task, since my brother is a three-year-old who likes to use Gus as a pillow.? My whole family loves Gus, and we?d only do good things for him.

Can you guess where this is going?? While I was researching this post, I learned something about Gus?s food, Hill?s Science Diet.? We?d always thought that it was a good food ? it?s got the words ?Science? and ?Diet? right in the name!? Turns out that it?s not that great.

It?s one more thing to think about ? and of course I learned this just after we bought Gus a new bag of food.

Careers In The Automotive Technician Field | Budget Rent a Car

It can be a challenge to land a prime spot on a race car pit crew. Yet vehicle dealerships across the country are scrambling to find qualified automotive technicians for their own ?pit crews?-even with salaries of $ 30,000 to $ 70,000 or more, depending on the market and the technician?s level of training.

The U.S. Bureau of Labor Statistics estimates that the auto industry will need 35,000 new technicians every year through 2010.

Lucrative But Overlooked Careers

With that in mind, an unusual contest is getting into gear with the purpose of increasing awareness about this lucrative and rewarding yet often-overlooked career, and support training opportunities for future technicians. It?s called the No. 29 Goodwrench Expertise Challenge. And it is a challenge. ?Historically, being an automotive technician has been depicted as a dirty, dead-end kind of job,? said Peter Lord, executive director, GM Service Operations.

?That old stereotype could not be further from the truth. Today?s cars and trucks are very sophisticated-the computer technology in them alone, for example, is nearly 1,000 times more powerful than what took the Apollo mission to the moon.?

?Dealerships need trained, qualified technicians because they know that satisfaction with vehicle service and repair work is closely tied to how customers view their vehicles and the dealership.?

The Challenge benefits automotive technician training like this: If driver Kevin Harvick?s No. 29 car wins two out of 12 selected NASCAR NEXTEL Cup Series races beginning May 28 with the Coca-Cola 600, GM Goodwrench will set up a $ 200,000 scholarship fund to encourage Automotive Youth Educational Systems (AYES) high school students to continue their automotive technical education by attending GM Automotive Service Educational Program (ASEP) colleges. AYES is a nonprofit business and education partnership that creates automotive technology career opportunities for promising young men and women at automotive dealerships. It was founded in 1995 by former GM Chairman Jack Smith as a way to address the growing need for technicians.

Spreading The Word

?There are thousands of NASCAR fans-and others-who are ideal candidates for a career as an automotive technician,? said Larry Cummings, CEO of AYES. ?The Expertise Challenge is a fun and engaging way to help spread the word about these great career opportunities.?

Students enrolled in GM ASEP two-year programs earn while they learn, rotating their time between classes and interning at GM dealerships and other GM service centers. There are 66 GM ASEP participating schools in 38 U.S. states, 15 in Canada and one in the People?s Republic of China. Successful students graduate with an associate?s degree, and either are ready for or have passed their National Institute for Automotive Service Excellence (ASE) certification test. More than 2,000 students are currently enrolled in the program, and there are more than 14,000 graduates.

If Harvick and the team meet the Expertise Challenge by winning two of the 12 select races, GM Goodwrench will award 29 Grand Prizes, which consist of an all-new 2007 Chevy Avalanche, a $ 1,000 GM vehicle maintenance certificate and a trunk full of Reese?s products.

If only one race is won during the promotion, two lucky winners will be awarded an all-new 2007 Chevy Avalanche, a $ 1,000 GM vehicle maintenance certificate, and a trunk full of Reese?s products.
